For every option, compare saleable output, people, utilities, cleaning, changeovers, quality holds, waste, floor space, and future expansion on the same basis. A compact footprint can still require a full food-safety and acceptance plan.
Batch processing can support flexible sequencing, deliberate additions, sampling, and defined lots. Its real output depends on usable vessel volume, fill/heat/hold/cool/discharge time, cleaning, changeovers, staffing, and downstream availability.
Continuous processing can reduce repeated batch transitions, but it needs stable feeds, controlled residence conditions, balanced upstream/downstream capacity, diversion logic, start-up and shutdown plans, and a cleaning strategy that matches campaigns.
