A jacketed vessel, agitator, temperature measurement and controlled utility circuit are specified as one batch module. Scraping is selected where wall deposition requires it.
Viscosity, wall fouling and particle integrity influence agitation and heat transfer. Compare the entire charge-to-clean cycle, not heating time alone.
Vessel temperature alone does not prove the coldest product location reached a validated treatment. No common time/temperature setting covers every sauce.
